Your choice of cooking oil doesn't matter.
You didn't state exactly what your procedure was so it's hard to find out where you fucked up, but the best guesses are:
1) you did drain the tuna, right? Too much juice from the tuna can will make them fall apart.
2) you did add the egg and the flour, right? Those are the binders which hold the patties together.
3) You aren't trying to flip the patties before the bottom is cooked all the way, are you?
Remember that you can always add more flour if you think the mixture is too soft to form patties. Recipes are guidelines, you don't need to follow them exactly.

So Heaty, my 1943 American Standard Radiator Company furnace heater just crapped out on me overnight. There's still a flame, but there's oddly no heat coming up through the flue/chimney/whatever nor through the steam pipes and into my radiators.
To help take my mind off the freezing cold and in memorandum of old Heaty's 72+ years of service, let's have a thread about foods that warm you right up, body and soul while I either find a repairs guy who won't fleece me or shop online for a new heater from Home Depot or Lowes, pay for delivery and have it installed.

The gas still works just fine, just the heater that's fucked. Well, actually not, as it turns out.
The repairsguy came and said the heater is working fine and that it's the thermostat that's fucked and that I need to contact an electrician.
I did.
The electrician wants to charge an arm and a leg for emergency service because it's a Sunday, so my nose grew three sizes and a hook just then and I said I'll call someone else.
A different electrician is coming tomorrow morning.
I'm slow-simmering a brisket and some tails right now for dinner tonight. That's helping to keep the house a little warmer, at least.

It depends what kind of vegetable oil. They have different fatty acid profiles. Oils with a high smoke point are good for frying. No idea about deep frying because I've never done it, but if you're concerned with something being "good for you" I wouldn't recommend it.
so I'm a culinary student, I'm doing pretty fucking great in my classes and I have top notch internship lined up this year. If all goes well I'll be in a solid position to go literally anywhere in the world next summer and I'm trying to get a jump on it. Right now I live in the Northeast United States and I could bounce from restaurant to hotel for the rest of my life if I wanted to, learning and experiencing plenty, but I'd like to use my vocation to travel and actually see the world. It's too bad I don't speak french and my spanish sucks, living and working in Europe or South America would be my first choice but I'm down for anything. I'm obviously not asking /ck/ to make my decisions for me here, I am constantly doing research and analyzing what I really want and what would be best for me and my career. But I feel like I'm sleeping on some world class cities and cuisine. So what am I missing? What are some highly livable cities I should be looking at? I need a place with a good drinking culture, I can't be stuck in some backwater full of senior citizens any longer.

add any of the following: butter, cream, sour cream, cheese, herbs, etc
season to taste. White pepper goes better with potatoes than black pepper though.
Its also important not to over/undercook the potatoes, over work the potatoes, and use starchy not waxy potatoes. You should also at least be salting your water that you boil them in. You can also flavor this water or use broth/stock to add flavor to the potatoes as they absorb both the water and flavors in it.
