Beginner here. I made some pasta with rice and it doesn't taste particularly good
I put olive oil, i put the pasta, i kept stirring, i added a bit of red onion, i added rice, some salt, and then i closed the lid and let it boil until the pasta had good texture
Then I put some pepper and a bit of chilli. Now I'm eating it and it tastes meh. What did I do wrong, what can I do next time better, and how do I become a better cook?

Next time look at some recipes for dishes using the ingredients you have on hand and pay attention to the order they add ingredients and how they season it.

Have you ever kept a garlic clove in your mouth and chewed it slowly? It can become unbearable depending on the strength of the garlic. You should try it if you haven't.
If I had to eat a lot of cloves (why?), I'd cut them into swallowable sizes and swallow them with minimal chewing.

That's probably because you're buying 3 sticks at a time.
It's mostly saturated fat, it'll take a lot lot lot longer than the expiry date to go rancid or bad unless it has other shit in it.
Expiry dates are almost universally too safe, which isn't a bad thing, but know why it's there and eat accordingly. Eating fresh veg is important, for things like butter with minimal health benefits (at least compared to milk) it's far less important
Also freezing butter is perfectly fine
