We're looking to make an American classic tonight my /ck/ulinary friends. With inspiration taken from a different thread on the delectability of sloppy joes, I was thinking of making some sloppy joe stuffed buns... but tonight we're just sticking with tradition. Think weekend though--Sunday specifically and we're looking to make a breakfast spread Saturday morning--I'd like to try my hand at a more conventional pork stuffed bun. So there's the week that lays before us in terms of cook-alongs. For now, let's just get us started on some dinner.

Inspired by Kawell's thread last night, I went ahead and documented my chicken and Andouille sausage gumbo.
Started off with the chop chop. Two onions, two celery ribs, and three fat jalapeƱos. All to a medium dice.
I know bell pepper is traditional, but I had one and not the other, so jalapeƱos a go. Deseeded, of course.

I'm so sick of this shit. Why has the food industry pushed so hard for ultra thick, "applewood smoked" bacon?
I can't find regular bacon anymore. My biggest beef with this bacon is that it is tough. It's chewy like fucking jerky. Most of the time, you can't even cook it crispy so it's more like a god damned ham steak. If I wanted one I'd buy one.
I don't want that when I'm trying to enjoy a BLT or a all-butter croissant with soft scrambled eggs.
Also, this "applewood smoked" shit is another pervasive, meaningless buzzword like "Black Angus".

They're good, although in most recipes the tomato sauce flavor is a bit too strong for my liking...I prefer making mine something similar to a loose burger, just overall less blatantly tomato sauce tasting even though it's in there

Imitation crab doesn't imitate crab well at all. It got called that name for some reason, and the name stuck. Best to think of it as something different from crab entirely.
Nothing particularly wrong with it either, as it doesn't taste bad.
