I am making smoked salmon for the first time on my smoker.
I cured it with salt and sugar last night. And its going to be smoked at 170 or just under for about 2 hours.
This is the first time ive ever had hot smoked salmon.
Can anyone recommend some side dishes that would go good with my meal ?
I dont know what people eat with this smoked salmon. Usually when I make it we just pan sear and serve with a sauteed tomato onion and mushroom topping that has wine butter and lemon. Then I eat it with wild rice or cous cous and some kind of veg like Broccoli or Asparagus.
I could go with Broccoli and wild rice tonight but what else would be good sides ?
This is an example of how I am doing the fish:

I use this recipe and only this recipe and my family loves it

I tend to eat as little as possible with salmon
It goes well with the same things white fish does: Fennel, White Potatoes, Sharp Tomatoes, Couscous, Quinoa, Pearl Barley etc

brah, with my BGE, I brine for 8-10 hours.
rinse fillets 3 times otherwise they tend to be overly salty when finished.
dry for 3-4 hours to form the pellicle.
smoke at 180* for 4-6 hours. i like to smoke at least 4 for softer fillet and 5-6 for da' candy.

Why aren't you staging at a Michelin starred place right now?
What do you think of this chicken parm, /ck/?
>>7747615
Chicken Parm you taste so good...
Looks really good, I'd fuck it up.
>>7747615
I would be full for at least 7 hours after that.
Why is it so much better than white sugar (except for baking)?
Less processed, more flavor.
Sweeteners shouldn't have any flavor to them
Like most white things, the brown version is better
I got 100 bucks for food.
Should I buy a bag of carrots, and celery, some chicken and potatoes and rice, maybe few bananas
Or 100 bucks worth of junk food and pop?
I can tell you the junk food I can get 50 bucks of it and still feel like I have too much, but the veggies and little bit of meat i'll go over the 100 bucks without even trying.
>>7747362
try harder dumbass
>>7747362
>but the veggies and little bit of meat i'll go over the 100 bucks without even trying.

>>7747301
>eating when sick
>>7747301
Last time I had a cold, I drank Puerto Rican rum. It helped me forget I was sick.

nice try senpai
Adaptations you've made to your normal diet
I've started non-edible parts of vegetables, like the husks of onion in making stocks
I've completely replaced lettuce with cabbage, which in my opinion tastes better and seems to last longer
I include leeks in most savory dishes because they're cheap and taste great. Leek and potato soup is one of my staples now
>>7747043
Why the fuck were you using lettuce for vegetable stock?
>>7747043
I eat random plants growing in the yard.
>>7747043
Those aren't leeks.

Doing some work on some servers now that I've swtiched careers. Feels good not coming home reeking of chopped garlic and an aching back every night.
What am I in for, what will they taste like?
Probably like someone took an unwashed foot and covered it in Doritos™ Brand cheese powder.

Also have these, no idea.

I want to start a raw food diet. Any advice? What are some good raw foods?
>>7746700
Why do you want to do that? What's wrong with cooked foods?
>>7746705
If i don't need to cook it, it is easier to prepare.
>>7746712
You can eat raw like everithing, then try to digest it

>keeping your apples in the fridge
>>7746658
keeping fruit outside of the fridge is such a massive meme

He's puttting uncovered food in a fridge that is stocked with shit beer and kraft singles, and your nitpick is going to be the apples?
Why does /ck/ hate ketchup? It's easily the best condiment
/ck/ likes to be contrarian and say how ketchup is for babbies even though it's absolutely acceptable with some things
it's like /tv/ saying they hate breaking bad just because it's popular
>>7746148
I haven't watched Breaking Bad yet.
way too much sugar
Am I going to die of hunger if I study gastronomy?
Is it worth the time? Is it hard to get a job ? Im scared /ck/
and before you ask. im not underage
you will eat at work, hunger would be the least of your problems.
you will work AT LEAST 10 hours per day, standing on your feet all the time.
you might get a 20min breaktime MAX
you will inevitably get health issues due to stress and standing up all the time.
half of the money you 'll be making we 'll be going to the doctors.
you will be getting payed FAR FAR FAR LESS from what you need to be payed.
your work enviroment will be really really noisy and very very stressfull.
your co workers will be quirky at best, asshole you 'd want to beat to a pulp at worst.
to sum it up i'll tell you what i've been told by an older chef when i was 21 working at my first job
"You should know that with the type of job you are doing you have only 2 outcomes. Alcoholic or fucked up"
after 10 years on the job i'll add one more thing, addicted to drugs.
unless this is your real passion find something else to do.
and i mean really your passion, in a sense that if you can't bend your knees anymore like me it will have been worth it.

Just curious what if you worked at an upscale restaurant that pulls and redistributes tips?
There's a place like that in my town and I have a buddy who worked as a busboy there and got to take home 3% of the tips which was like 200 a night and he said the cooks got the largest percentage
Wouldn't that make your pay much better?
Also how much do you make per hour and how does it make you feel that I make the equivalent of 20 dollars per hour to deliver pizzas
thats bullshit! my dad works as chef at restaurant. he got 1200€ (normal Pay in my country is shitty 500€) works 8hours a day, free weekends, have time for family. he standing almost all the time on his feet but times flies by. u dont even notice and u r home.
How much ketchup should I put on this?
Just enoguh to turn that dog into a mobile za nawimsayin.
You guys are quite married to these memes, no matter how bad they are.
I don't know if I'm impressed by the dedication or shocked by the lack of good taste on a cooking forum.

The best way to eat this is to toss it in the garbage and not eat it at all
Hi /ck/
I'll be in Las Vegas for three weeks (I'm from CA) and am looking for good restaurants that aren't tourist traps, buffets, or plain overpriced.
So far I've eaten in Izakaya Go in Chinatown and I've enjoyed the two or three times I've eaten there.
Any recs? Thanks in advance.
>>7745835
why are you discounting the buffets?
>>7745962
There's only two buffets worth going to anyway (Bacchanal and Wickedspoon)
If you know a decent hole-in-the-wall buffet then by all means, but I'm generally not a big fan of buffets
>>7745974
uhh...hole in the wall buffets are gonna be like old country buffet, proper las vegas buffets have good product.
do you understand that?
