I usually can @ 50-60 quarts of Roma tomatoes from garden produce. They can be canned in a water bath but I have a big Presto pressure cooker so I just do 25 minutes under pressure. I freeze the other vegetables since I have the freezer space. I can stocks for 25 minutes under pressure. I found a recipe for smoking and canning salmon from the University of Alaska that I've really been happy with. I'll post a couple pics. My advice is always follow USDA or accredited university guidelines, not just Grandma Sadie's canning blog.

Baked Blooming Onion…RECIPE
It’s really easy to cut the onion this way - Lay the onion on the cutting board so that the flat side (that you just cut) is facing downward. Then use a knife to section the onion into 16ths, beginning with your knife 1/8-inch away from the root and cutting straight down. Once all cuts are complete, turn the onion over and set on a piece of parchment paper on a baking sheet. Then use your fingers to gently spread apart the petals. If any of your cuts did not go all the way through, you can use a paring knife to be sure that the entire onion is cut into 16ths.

I like making quesadillas at home, and I like Taco Bell's quesadillas, but my at home ones never taste much like the TB ones

How exactly is the Taco Bell one cooked, for example, at home the only way I get that kind of nice brown sear is by frying it quite well, but by that point it's very crispy, Taco Bell quesadillas get that brown toasted edge but still remain soft

You can watch them make them. They take a tortilla, put cheese & pre-cooked meat inside it, fold, then put it on a panini press and let it run for a set time. I think it's about 45 seconds.

That's a good thing IMHO. Though if you want them soggy you could cook at higher heat for less time. That way you get the browning on the outside but there's no time for the tortilla to cook all the way through and get crisp.
