You can use it copycat certain meats and vegetables in certain applications, but I certainly wouldn't say you could do it for "most foods".

Nothing is more infuriating to me than going to a restaurant and friends/family insisting that we sit outside.

Fucking assholes. If I wanted a picnic I'd go to the park. Why can't we sit inside where it's not so damn hot and there aren't 10,000 bugs.

Summer is here, making seafood paella (no chicken) for some friends, any tips on what I could replace mussels with?

I use prawns and squid but my recipe also has mussels in it. I don't really enjoy mussels so was looking for an alternative if there's one.

I use 1 part whole rye, one part whole wheat, 1 part white wheat, salt, sourdough starter, and some sunflower seeds. Smells and tastes great.

Preheating the oven now.

The starter and whole flours have been resting for a night. Then I put some starter on the side and mixed in the rest, formed a loaf, and let it proof another 2 hours. The pizza stone should be just about hot now. I always run the oven on max which reads 250°C/480°F. 30 minutes should do it but I go by crust.

What so you do to keep your oven humid?

Usually I put a sheet pan in the bottom of the oven as it preheats and then pour a cup or two of water onto it when I put the loaf in. Is there a better way?
