I think green one is most sour. Red is the classical one but yellow and orange are just like red but little bit more sweeter.
i can't tell the difference between red, yellow, and orange.
but green is definitely distinct. just a little more pungent flavor. the texture seems different too, it's more crunchy and thick. it takes longer to cook.

They are basically the same. The red is just more ripe. Leave the green and yellow pebers on the bench for a week or two and they will turn red and sweeten up.

I'm making some weeb curry in my slow cooker. I got my beef, my onions, carrots, celery, some chopped raisins, grated in a little ginger and semi-sweet chocolate, and added a little soy sauce, Worcestershire (what the fuck, Britain?), and sriracha. Tossed my meat in a little salt and pepper first, and added a little cayenne and dried red chili powder for some extra heat. Got my package of weeb curry roux in there of course, too.
Anything else I can throw in there to really elevate my curry to Fieri-levels of flavortown?
Oh yeah, also threw in a little MSG and I'm using beef stock instead of water for my liquid.

I bought a jerky gun from Amazon and it came with some spice mixes and "cure" sachets. I've been making jerky for years from non-ground beef and have never cured it or even heard of curing jerky before.
What's the reason and do I need to cure it so I don't get sick?
