This was 6 eggs and 2 slices of REAL American pasteurized process cheese, with a generous spicing of black pepper.
It was a bit brown on the bottom for my tastes, but overall it was delicious.
Good God eggs are such a great breakfast. I feel like I could line up for battle and get hit by a cannonball and it wouldn't even phase me.

Salt is just a crystal, crush it before or after, it doesn't fucking matter.
Pepper is a spice, there's volatile organic compunds in there that will fuck off on you if you leave it sit in open air too long. Grind fresh, and that goes for every other spice you can get whole, for that matter.
For salt, it doesn't matter at all. Peppercorns, on the other hand, are much more pungent fresh-ground than pre-ground.
Horsey sauce on the dommy za' works quite well.

i was pleasantly surprised by how nicely this loaf rose, and how easy it was to shape. in the past i've had difficulty shaping the high hydration doughs i've worked with. i think the partial whole wheat flour helped firm it up and aided in the gluten development.
