Sure, people have done that many times before. Crushed cereal, potato chips, etc. is often used as breading.
Dunno why you would want to do that though, it seems like there are plenty of alternatives that would taste better.
I have a bunch of basil. Was thinking about making pesto but can't afford pine nuts and parmesan isn't vegetarian. Can it be done with cheap nuts and cheddar?
Failing that please suggest alternate uses of loads of basil.

I use it whenever I make curries, or coconut rice, or certain stirfries, baked goods, or anything where the flavor of coconut might be welcome.
Just make sure you're using unrefined virgin coconut oil, otherwise you're not getting the supposed benefits.
