I've worked in the industry for over a decade and have picked up many skills in my time.
I've worked under anything from meme chefs in 4.5 star places to Pablo's taco stand. I know my food and my kitchen inside and out.
I understand why I do things and what effect I'm going for when I do them. However, now that I'm in a time in my life where marketing and appearance are much more on the forefront of my interests than skill, I realize I dont understand the science behind a lot of the things I do or why and how they work. I've never had any formal schooling and the jobs and skills I've acquired have just been at work
Are there any books that are vast and detailed about basic techniques? Quintessential things I should read before calling myself a true chef over a cook even though I've worked in and around the industry for so long?
I just want to make sure there aren't ideas and things that are staring me in the face but I'm missing because I didnt think about them having not understoo properly every facet of a dish I was creating.

I'm keeping a pretty strict diet and getting /fit/ at the same time, and as you know, chicken breast are a great source of lean protein and calories.
Due to health complications, I can't eat fried foods very often and I'm pretty bored of eating it boiled every day.

Chick fil A has tasty chicken but my favorite fast food chain is Taco Bell desu. It's the only one with an actual dollar menu and in general the food is cheap. Plus I like the food. When it comes to fast food, low cost is the most important factor to me.

Well, they're called mud bugs. I think some of the process of cooking them is to cover up any kind of mud flavor, which is mild mind you. They are somewhat like lobster flavored, but ideally they are cooked in a pretty good amount of crawfish/crab boil seasoning, which is like the cajun equivalent of bay-heavy Old Bay. A liquid boil is better than a powdered for heat, has essences of thyme, marjoram, clove, bay, and lots of hot pepper, but missing some of the mustard seed and dill element. I think crawfish tastes like the boil, but succulent and buttery, lemon-y with the butter added too. Plus any corn or potatoes cooked with it. A lot of people suck the crab boil liquid that lingers in the head.
A cross between shrimp and lobster is how they taste to me unless you go to a place where they sell the bigger ones and those taste like lobster
