It's not easy to tell. the layer is so incredibly thin that' it's difficult to detect.
Only way to be sure (outside of a crime lab) is to pick the lemons off the tree yourself.

I've been eating with cheap-ass wood chopsticks for over 30 years. Never once had a splinter. Never heard of anyone getting a splinter. I'm convinced that this happens so rarely that it's entirely a non-issue. How on earth would it even happen? Do you chew your chopsticks?

chefs are starting at 7AM prepping for dishes they will serve at 7PM that night

You want something like in your pic?
Easy!
Keep your pan over medium-low heat, not too hot, or the egg will cook too fast.
Make sure your pan is well oiled so the egg won't stick.
Crack egg in pan (you can add a tablespoon or 2 of water to the pan, but it's not really necessary)
Cover pan and let egg cook over medium-low heat until the white of the egg is just set, but not hard. At this point, the yolk should still be runny.
It's really all about keeping the heat low so the egg doesn't cook too fast.
