Just bought a pre-seasoned carbon steel pan.
I turned the element on max and let the pan heat up for like 3 minutes then I put some canola oil in it and the oil started smoking like crazy. I took it off the heat and covered it because there was too much smoke and I thought it would start a fire.
What the fuck, this isn't like those youtube videos at all.
What am I doing wrong?
I'm trying to make a stir fry, I thought you needed high heat for that?
Am I supposed to lower the temperature?

Put the oil in the cold pan you dummy then you can turn it down/take it off once it smokes
You want your ingredients to sizzle when they enter the pan. This signals that your pan and oil are hot enough to start caramelizing the natural sugars which adds depth of flavor to your meal. (The difference between microwaved chicken and grilled chicken)
Heat beyond that, (moderately-high, even, sustained) is essentially useless.
Cooking with electric elements can be less intuitive for judging how much power you are dealing with.
You have to become familiar with your stove and how fast is can heat things up.
A good test for the 'right high heat' would be to get your fingers wet and flick some water into the pan.

>If the water bounces off the pan and floats around on a bubble of steam( leidenfrost effect) it is hot enough.
You want to dance on that line.
Side note: A general rule is to heat your pan then add your oil/fat, never adding oil/fat into a cold pan. You did this but you might want to start with a smaller amount of oil. Some to keep things from sticking and to quickly transfer the heat of the pan to the food. If during your stir fry you want more you can add it a little later.

My folks just opened a dumpling place in Jamaica Queens and all the nignogs there keep thinking we're achicken broc, Generals chicken, Chinese food place. We tell them we don't serve American Chinese just dumplings and they're like "wtf is a dumpling".
Not a lot of people know what dumplings are and it's not exclusive to nignogs. I think dumplings and more traditional Chinese food being more popular but not enough for a chain. Especially since there's more "ma and pop" Chinese restaurants than fast food places.

Backstory - everyone knows I'm into cooking (and like what I make). When I meet with friends I occasionally give them some stuff I made, usually pastry.
We (me and my girlfriend) were meeting some of our longtime friends, two sisters (not twins, just two sisters that are quite close together and have similar interests and friends). I figured I'll make them cinnamon rolls as they were particularly fond of them in the past.
While kneading the dough on was loosely reminiscing about our friends and looking forward to the meeting. Particularly about the younger one whom I had a semi-crush when I was myself was younger (she was a long haired blonde and particularly tight with my gf; we were all teens etc.) And then, when I was mixing butter with sugar and cinnamon to coat the dough, something awoken in me. Long story short, I fapped. All I could think about was her cute face, imagining her pink lips on my dick. And fuck me, that was the biggest load I dumped in my life. Thick and viscous, it was fucking everywhere. At this point I figured I'll just roll with it, baked the buns and packed them (I was supposed to meet them in two hours). I wasn't exactly afraid they would notice anything, although I felt a perverted excitement. That excitement quadrupled and went directly to my dick when they ate the rolls with glee. When the sisters shared their rolls with each other, it was like they were cumswapping my load with giggles on their faces.
When I was home, dread (or rather guilt) set in: what the fuck have I done? I just stealthily fed two of my long time friends (and my gf I guess, but it's nothing new for her) semen and I actually enjoyed watching it.
What the fuck have I become? What I'm supposed to do? I'm disgusted with myself, it's nauseating.

I use a stand mixer, but I've never tried using a bread machine. Some breads I knead by hand and use stretch and folds too.

Aww, I have enough single friends who are orphans and such that there is always a misfit-thanksgiving to go to if I wanted. Go get some of those people this year, maybe volunteer at a soup kitchen, or go be a regular somewhere that those types hang out at...bar or club night til you become a regular.
I still have my parents and my siblings who are about 75% attending of dinners, but I miss the childhood holidays. Both grandparents houses, countless cousins all hanging out throughout the day. 30+ at dinner. Good times. But so many gone now :( There's never going to be a full family reunion ever again. /sad

Turkey with cheap this week at the store, so I bought one and am interested in roasting it. I have a 24 pound turkey currently thawing in the fridge, just started today. I expect it to be thawed and ready to cook by this upcoming Saturday morning.
My question is. Is it okay to thaw the turkey in the same pan that I plan to roast it in? The turkey is still in its original wrapping and has no holes in the wrapping, and I'm using the roasting pan because it's the only thing I have which is actually large enough to fully contain the turkey (not height-wise of course, but all around the perimeter). I suppose I could swap out for something like paper towel mats or maybe a shallow baking pan, butt it might not do the job. I admit that I am not an expert on roasting turkey.
The various sources I'm seeing online make it seem pretty simple though, and I've done tougher cooking jobs. I just want to make sure that I don't get myself violently ill next weekend. The cooking to 165 internal cavity and 180 in the thigh seems pretty no-brainer, so the only part that really worries me is that I could accidentally sabotage myself with the thawing process. If using the same pan for thawing as the pan for roasting is not a problem, then I think I'll be okay. Thanks /ck/
Also if you have any stuffing recipe recs or mashed potatoes or whatever that'd be cool. Call it a thanksgiving practice run since I aspire to someday be the guy who prepares the family bird.
You'll be fine. That's the time most charts recommend and the heat from your oven will kill anything on your pan once it's in the oven.

One thing you could do is remove a leg and smoke it to use in soup. Where I live making wild rice soup with thanksgiving leftovers is pretty common.
