Tough choice for sure but damn, those Italian, juice soaked sandwiches are better than 30 pieces of silver. It gets my vote.

Just made a carbonara , put in a clove of garlic with the lardons, peeled and crushed with the heel of the knife.

Cooking meats with a clove in the pan is a real game changer. I always do it with steaks and lamb now

It's unnecessary. It's just one of those end of meal pairings. Cheddar and apples goes together, right? Pears and gorgonzola? Of course.
So, it's all put together, and some people like it. The pie crust is buttery, as well, there's the dairy tie in to the crust.

I think if you don't like it together, that's fine, but it might be because it's low tier cheddar and simply not aged enough or the right texture (or even the right temperature). Or maybe you are a purist and don't want your pie messed with.
