Every time I open a bottle of liquor, it tastes best the first time it's opened, the flavor is less interesting and more bitter on later days when I drink what's left. I'm not doing anything obvious to cause this (like leaving the bottles open so the alcohol evaporates).
Is there some trick to avoiding this or does liquor always taste worse after more oxygen has gotten into the bottle?
I honestly desu imo think my drinks get better the later I drink it after opening. I had a Woodford reserve double oak that got way better a week after opening.

There are volatiles (both good and bad) that will evaporate and escape every time you open the bottle, so the flavor profile of spirits will change over time. Some spirits benefit from this, some do not. I prefer to finish any premium spirits I open within no more than 2-3 weeks (bottom shelf stuff I'm a bit more flexible over).
Additionally, there will be oxidisation every time the cork/cap is taken off and new oxygen gets into the bottle. This also affects the flavor.
On a side note I watched a TV show last night in which a repulsive Russian Jew in London paid £5,000 for the last nip of cognac from an 1811 bottling. I'm prepared to bet it wasn't as lively and delicious as when the bottle was first cracked decades ago.

Try broiling. Look up some youtube vids on methods but those fish with some lemon, salt and pepper and maybe a few herbs broiled will come out nicely.

What are some good meat substitutes, ideally without soy? I'm not a vegetarian or vegan so IDGAF if they use animal products. I'm just trying to cut down my calories.
Technically a meat substitute, but I've been using turkey bacon over normal bacon. I don't want to be stuck just eating turkey and some chicken though. I want some tolerable substitutes for beef and pork,.

I made patties out of lentils once and they tasted awful and kept falling apart. Vegetables just don't taste the same as meat and don't have the same consistency as meat either no matter what kinds of ingredients/spices you add. If you want a meat substitute you're mostly stuck with soy.
I've got a metal pan, it's non-stick, and things really fucking stick to it horribly. So I need to cook with really fattening oils or butters just so it's got a layer of slick grease and won't fuck up my eggs or hamburgers?
I heard that once something like a piece of chicken is browned and caramelized enough it'll release itself from sticking to it, but I've found that to not be true at all and I need to use oil. What am I doing wrong?
get it hot enough to where flicking water it doesn't sizzle away but rolls around like little pebbles. then use a pad of butter and fry eggs. i make eggs every day in my all clad and usually i can clean up with a paper towel.
IF you've got a stainless steel pan like the one in your photo then you're pretty much always going to need at least some oil in there. The only things you wouldn't need oil is if you had a super slick teflon pan (even then...) or were cooking something that was oily or fatty to begin with.
Using some oil in a pan isn't something to be afraid of. Obviously don't go overboard, but a tablespoon or so of canola or oil or whatever isn't going to make much of a difference to the nutritional value of what you're cooking.
