I've bought a rib eye today, and I want to prepare it later today
I've already taken it out of the fridge to get to room temperature
But my succes rate at preparing steak and steak related cuts are fluctuating to say the least
I have a 50/50 chance of successfully cooking it rare; the other 50% ends up in a charred-on-the-outside-fooking-raw-on-the-inside disaster (as in; cold as fuck, not even rare)
There appears to be a complete absence of consensus on the internet; some recommend big pans, some small, some a thick bottom, some a thin. The same for whether to use oil, butter, or both. And don't even get me started on the heat level. So let's do this: What is the proper way to cook a rib eye: final edition

For someone of your cooking skill level, I'd recommend sous vide, or a half assed version of it if necessary. Once you get the temperature right, you couldn't fuck it up if you tried. Then it's just a matter of a quick sear on the outside.

You want a large pan because a small one has the chance of just boiling a steak in its juices. You want a heavy bottomed pan for heat retention so when you slap the steak in the pan it doesn't instantly go cold. You start with a high smoke point oil so it doesn't burn when you sear it, but its perfectly good to finish the steak with butter and actually use it to baste the steak.

The heat level will vary depending on your stove, you need to know your equipment. If you have an electric stove you are going to want to start on high probably. But you really have to gauge it yourself, if it's going too fast just turn it down. Don't take any advice as a rule you can't break. Cooking steak properly is about getting to know your pan/stove/grill/oven etc.

If you're buying boneless skinless be sure you marinate it for at least overnight, that will break it down a bit. I cut it into chunks and use it for curry. You can also pound it and stuff it with vegetables and cheese.

It's cheap so that's nice but I generally don't buy them since they're so dry. I prefer to buy tenderloins on manager's special. I'll buy all of the discounted packs and freeze them for later use. They're much better.

So I'm making a homemade mac and cheese for Thanksgiving and I'm starting to peruse the internet for recipes. Since I love 4chan anyway and enjoy lurking here, I thought I'd see what you guys thought.

Heat it up
Add milk and cheese to desired thickness and taste
Dump on top of cooked penne, dump breadcrumbs on top, bake at 400F for like 20 minutes or until the top is nice and crispy.

How do you behave at a formal dinner? Thanksgiving is coming up and I don't want to embarrass myself in front of my gf's family.

We never really cooked at home when I was growing up, it was always takeout straight from the container in front of the TV. IDK if we even had cutlery.

Oh. In that case, hold your fork in one hand and your knife in the other. Don't start eating until everyone is seated and they say grace. (If that's something they do) Keep a napkin in your lap. If anything is out of reach, ask someone to pass it rather than reaching over other people's plates. Don't talk with your mouth full. Don't eat too fast. If you need to get up during the meal, excuse yourself first. Don't drink more than your hosts. Keep your elbows off the table and your hands above it while eating. Most families won't expect more than basic table manners. They'll probably be expecting you to be somewhat awkward and uncomfortable, as long as you're not being completely uncouth.

The one time we don't have a fucking coffee thread and I have a coffee question.
I'm sick of Starbucks garbage and I want to try a French press or aero press or something. I've always heard using fresh roasted coffee beans is much better than just pre grounded stuff. I was thinking I'd just get a hand grinder, but where do I get the beans? I don't have any coffee shops in my vicinity. What does "freshly roasted" imply exactly? Like literally right out of the roaster? Or is the shelf life long enough that I can order them online?

The only good bbq I've had was at friends pig roast. Most of the restaurants here are garbage if you want something other than seafood. When I see pics of bbq from other places in the country I get pretty jealous.
