For reference, my background in this industry is a high volume craft cocktail bar where we cut out own ice for some cocktails (we also used crushed, Kold Draft, and Collins Spears from Cocktail Kingdom molds). Current gig is a hotel bar with less resources as it doubles as a restaurant, but the selection of spirits is on par with the other joint sans amaros. I also prefer drinking at dive bars off duty since I'm a bar hopper.

Where can I buy or how can I make the sauce Outback serves with the bloomin onion ck?

1/3 cup mayo

2 Tablespoons sour cream

2 Tablespoons creamy horseradish sauce

1 Tablespoon ketchup

1/4 teaspoon paprika

1/2 teaspoon garlic salt.

1/4 teaspoon cayenne


Try something like that.

it is a small studio apartment and a gas stove from like the 60s or some shit

Is it a good idea to save and use the fat left over from making stock?

Made chicken+veggie stock the other day and there is a sizable amount of separated fat. Should i just toss it?

No, use it. It's called schmaltz. If making soup it's a good idea to sweat your veg in it before adding the veg to the pot. And reserve some fat for when your soup is done. You can add a bit more unctuousness to your soup by adding a tablespoon at a time toward your tastes. An article was just published about this in the NYT.
