Picrelated is a cheese crisp, just some cheese that's been ovened until it's crisp.
My problem is, how do I make these such that they are not full of holes and not fragile? I want cheese crisps that I can use to scoop stuff out of bowls or even as taco shells and their equivalent. Maybe even some day as a pizza base. Why? Because keto.
I tried using two slices of cheese at once, and they turned into a giant puddle that fell off the parchment sheet in my toaster oven. One slice turns into lace and shatters even when just being picked up. I've tried different cheeses, also, and haven't had any luck with any of them doing better than any others.
Would best results be to do one slice, then put a second slice on top and repeat? Or do I really need to get a silicone baking mat with a cup formed in it? Problem with that is, I can't find any silicone bakingware ANYWHERE in this benighted hellhole of a country, it's not the U.S. and people just don't cook much here, especially not bake.
Any thoughts would be appreciated.

you can use a more solid foundation. for example roll out a piece of bread flat, fry both sides of the bread over cheese, then cool and quarter
as for the taco thing, you can entirely use cheese like eggs for an omelet. layer a skillet with cheese and put toppings on top. when the bottom is fried, roll it into an omelet and cool. the oils in the cheese will fry the ingredients as well, for example onion will be entirely translucent by the time the cheese is fried

hi /ck/, today I am preparing a green bean soup. It's one of the comfiest foods I know and it's usually a winter dish, but it has been a really bad summer here so far so I am really in the mood for this.
Ingredients:
1kg of green beans, I don't know the exact english word for those
600g beef, from the ridge
3 raw sausages (about 400g)
1 piece of bone with marrow in it
300g potatoes
200g celery root
200g carrots
200g parsnip
3 teaspoons of instant broth (yeah I know i am the worst)
salt
pepper
2 bay leafs
savory
first I am cooking the bone with the bay leafs for about 1 hour. some people throw in the meat when the water is still cold, but I have made the experience that it becomes chewy that way
in the meantime, i cut parsnip, celery and carrots into cubes...

How comfortable with shallow frying are you? Eggrolls are a lot more simple than I first thought. I'm a little nervous so I cooked the cabbage and pork filling first, then wrapped it up and fried it in 2 inches of oil (lets you do some work on your cast iron if you have it.)
Strain the oil through a coffee filter and put it in an empty pasta jar, use again and again.
