Christmas prep/spontaneous cookalong thread.
Just decided to throw together a few jobs leading up to my Christmas lunch. I don't have much time off to really get this stuff going, so I've gotta set everything up in a way that makes the day itself as easy as possible.
Getting started with some confit garlic.
Lightly bubbling away.
The garlic and the oil will play some pretty solid rolls in a salad I'm making on the day, as well whatever other uses I can think of for it.
Then some eshallots that need to be pickled. No mandoline, so lets start slicing.
Note: the lighting will get worse as these go on. Without natural light my house gets kinda yellow in photos. Not fun.
Pickling brine.
200ml apple cider vinegar, 100g white sugar (and a little more after adjustment), 50g salt. A couple bay leaves, some dill seeds and peppercorns.

I'm drunk and thinking of subscribing to Bon Appetite magazine for a year.
Is this a good idea?
If you haven't subscribed to cook's illustrated do that first.
I've had subscriptions to both and found cooks illustrated way more useful.
Bon Appetit has some beautiful and tasty looking food, but 95% of I would never make.
The magazine is half ads, but I'll admit that I've collected quite a few recipes from them over the years. I honestly love getting magazines in the mail, but there isn't a single one that I really feel is worth it (used to to get Lucky Peach for it's first 4 or so years but that went downhill fast).

Hell no. Got it as a gift, but it's all coastie food tourism and trending bullshit. Get cook's illustrated and/or cook's country. Also, from those two magazines, never make them to-the-letter. Trying to satisfy everyone (tasting panel approved recipes) satisfies no one.
Are sizzle platters worth all the hype?
Not that they're worth much, just little aluminum things.
Having worked in multiple restaurants I fucking love sizzle platters. They're on-the-line multi-taskers x10, that can be used literally anywhere other than the deep fryer.

Also, I think any cabbage would do. I've never had cabbage with any Japanese curry I've had in a restaurant though.
Kratom thread? It is legal in my state. I have multiple sclerosis and it has helped me with some of my symptoms.
How do you ingest it? I just take a mouthful of water and then dump the kratom into my mouth (with the water still there). It tastes like tea, maybe more bitter. I can take about one teaspoon at a time doing this.
Yogurt is one thing I tried to mix it in, but it ended up being shitty tasting yogurt. It doesn't mix with water. Kratom is supposed to be taken with an empty stomach. I don't like the capsules.
Anybody have experience? Is there a way to consume it that doesn't taste awful?

I've heard chocolate masks the taste very well. Try a milkshake or maybe even a chocolate protein shake for breakfast.

I don't really know how to make a milkshake or smoothie. I also don't have a mixer. If I did though, how many ingredients and their amounts would I need? My mother makes these really good vegetable + fruit smoothies, would that work?
Honestly, I'm looking for something minimal and fast with very little clean-up. Mixing with yogurt was even a bit more tedious because I had to eat it all. The method with the water in mouth works because it is fast, just not ideal. Almost like swallowing cinnamon but tasting like bitter tea.

Buy the hardest part of recipe pre-made (like store-grilled chickens) and garnish to taste.

You need to figure out what exactly about cooking gives you anxiety and then gradually expose yourself to it until it goes away.
A personal example: mushrooms. They used to skeeve the shit out of me, so I started with eating things that had the taste of mushrooms in more predominant roles, then I started eating things with finely chopped mushrooms in it, then increased the size of the mushrooms in the things I ate. Around this point I started preparing mushrooms myself, but I would get them pre-sliced so I didn't have to touch them as much. I worked with it more and just this past thanksgiving was able to buy whole mushrooms that I prepared with minimal freaking out.
I hope you can take something from this.
General statement: cooking isn't difficult. It's just a series of simple steps that build upon each other until you have food in front of you. Start easy, like with cooking pasta. There are foolproof recipes opie; don't forget that humans have been cooking for far longer than canned/prepackaged shit has been around.

I don't know how to practice cooking. Is it something like buying a bunch of a certain food and then cooking it, throwing it away when you mess up and getting another one right after and trying it again? My family never taught me how to cook even when I asked constantly when I was growing up.

Here it's called "Peanut Pulp" which is just mashed Peanuts with no additives. Alternatively with salt.

Many better groceries have fresh ground peanut butter in the deli area. I think Smuckers natural is without sugar.
