Not OP but usually I only stop at places like that when I'm driving long distance (across country for instance). It's cheap and pretty fast. If I'm not pressed for time though, I usually try to find some good local stuff, like when I got some BBQ in Memphis.

how can I tell if this gorgonzola is still good to eat? I bought it about 2 and a half weeks ago intending to make a cream sauce with it, but I got caught up eating holiday stuff and didn't get a chance to make it until now. it's been sitting in my refridgerator since I bought it. it has green mold growing on it, but I don't remember if it's more now than to begin with.

as nasty as this sounds, fuck it seems to work, I had some sharp cheddar that had grown a winter coat, I shaved that shit off and took a nibble on the cheese just to see what it would taste like; I wound up using the rest for homemade macaroni and cheese. The shit was delicious, it was way more, "sharp", it definitely gave it a bolder cheese flavor. Consider the French eat cheese with maggots in it..

I do that shit all the time, if it's now too strong to eat solo as a cheese, perhaps make a sauce or butter for steak or whatever else.

Talk about an item in your kitchen you think is either unique or just really cool. I picked up this dehydrator recently from craigslist. It's not my favorite tool but I made spicy ground chicken jerky which was actually pretty good, I'll probably do it again.

I've never worked in a restaurant but I assume that steaks get sent back more than any other food because it doesn't match the customer's idea of rare, medium rare, etc.

Can't do that with well done. When you get your boot it's not changing regardless of how many times you send it back.

This week Publix has their $3 king deal. A fried chicken thigh, a drumstick, two sides, and a roll. Today I got the okra/tomatoes and green beans for sides.

I was gonna get something healthier but three fucking dollars man. At least they had two veg to choose from. They usually just have one.

Hi guys, do you think it's doable to confit chickenbreast sous vide, then grill it in the oven for a couple of minutes to crisp the skin, then add some chévre on top of the skin, back in the oven for a couple of minutes to melt and grill the cheese?
I'm a bit afraid this will dry out the meat. Would it perhaps be better to sear the skin in a pan, then melt the cheese in the oven? Or maybe serve with hasselback with cheese added to those?

Sides will be fennel and some asparagus, with beurre monté.
