i use single cream so there is no need for whisking. i imagine you would need to if you used heavy cream though (it's basically pre-whipped double cream, isn't it?)

It's disgusting, how do they get away with this? What's wrong with this awful shit....however the beef ones were significantly better which I had to try as well, but these bean ones are just a shame to bean burritos which are supposed to be good

I've had them. They're bland but that's why I add hot sauce and/or pour enchilada sauce all over them, with a little cheese.

I've just discovered the best way to get perfect microwaved sausages. I've struggled for years with microwaved sausages that were either dry and exploded because they were thrown on a plate in the microwave or dripping with water (and sometimes exploded) because they were immersed in water.

The secret seems to be to put them in a deep ceramic dish or bowl, wrapped loosely in a paper towel. The dish is filled about a half inch deep with water and the defrost setting is used for 10 minutes. To crisp them up, they are cooked again in the towel on high for another 2 minutes then in the open for a further 1. The best part is that if you add some flour and salt to the water and microwave to reduce, you get a rich sausage gravy.

Does anyone else have tips on microwave cooking or other crafty cooking methods in general?

Hey /ck/, I got into some trouble. My housemates are throwing a gathering tomorrow and I offered to bake a pie, yet I have no experience. Got any tips?

It's easy enough to bake a graham cracker/cookie crust pie. Blend or smash the cookies, add melted butter, sugar, bake 10 minutes to set, and set aside to cool. Make 2 at once, of course. I also suggest buying a 2pack of pyrex pie pans.

Then pick one, from key lime pie to black bottom chocolate pudding pie to banofee to coconut custard to peanut butter, or make your two pies different. Pour into cooled crust, refrigerate, and serve with some cool whip or whipped cream. People like squirting out of the cans themselves which is good event for a party. If you make key lime, buy the bag of limes to squeeze, and add lots of zest. This pie can be frozen ahead and is best right out of the freezer.

I wouldn't make my own piecrust for a first time pie. But, a single pie crust pie isn't that hard with the roll out dough. The frozen shells in pans can also be used. Just fill them up with some awesome fresh fruit and spices and top with a crumble topping. Peaches, apple (use tart), berries or dried fruit thrown in too. An alternative for crowds is to skip the pies entirely and make a 9 x 11 "buckle" or other crumble topping baked fruit idea.

How do you do your meat balls /ck/?

balls:
>1/2kg ground beef
>two bread ends crumbed
>3 eggs
>some milk if it's too dry
>shit loads of garlic and onion
>oregano, basil, chili powder, tiny amount of cumin and smoked paprika
>parmesan or blue vein cheese

sauce:
>can of blended tomatos
>spoon of concentrated tomato paste
>thyme, peper and capers

normally cook them at a low simmer for 45 minutes or until it's half reduced with a lid on, then into the grill until they're dark brown. optionally after roll them in the sauce again for more tomato flavor.

I like to make a slurry with the milk and bread crumbs, always end up with some nice moist balls that way. I think a blend of pork and beef is better than just one meat. I fry them in a shallow pan of oil

The only meatballs I regularly make are morrocan spiced lamb balls, with cumin, mint, coriander, red onion and dried apricots.

In a similarly spiced tomato sauce, and crammed into pita breads. They're really good.

That's a good base recipe, but the flavors are kind of all over the map...cumin...capers..chili powder..thyme. Plus blue cheese? I dunno. I'd rather make batches of differently flavored balls and sauces, mix it up but kind of stick to a country at a time theme.

I make meatloaves or mini meatloaves more often than meatballs. I'll do a base that is similar maybe 100% beef or 25% pork. I portion my meat mixture into 2 bowls and season them differently. I'll do an asian hoison topped one, that has lots of garlic, cilantro, ginger. I might give it a glug of makoto dressing, and just do the breadcrumbs even. Glaze with some chili paste thickened up with some peanut sauce or hoison. If I am cooking ahead on purpose, I'll portion into 2 serving patties like mounds on a cookie sheet and glaze that way, for maximum crust on top.
My other mixture might be lightened with some swedish meatball flavors, traditional meatloaf with a chili sauce topping, lots of celery, onion and garlic. I too bust up my bread heels, take it easy on the eggs and milk, and minced mushrooms are my favorite additive in meatloaf that just holds the juices better than too much egg and bread.
Sometimes I flavor a meatloaf or meatballs like "gyro" meat flavors. Actually it's my favorite, but I have to include a little lamb but in the US it's hard to get it in a small amount, and I only like 25% of it in the blend.

Not trying to shit on anyone's dietary choices, this is an honest inquiry.

Clams and mussels have no central nervous system; they're about as likely to feel pain as a head of lettuce. Commercial varieties are are plentiful, nowhere near endangered, and do not produce harmful greenhouse gases that livestock farming does. They filter feed water, which means that no grain or food otherwise consumable by humans was used to obtain them.

I can understand people simply not liking the taste, but that's besides the fact.

What exactly keeps clams and oysters from being considered vegan? The fact that they're composed of animal cells?

Had some salt and pepper squid dish at a vietnamese restaurant awhile ago. It was nice and crispy without any breading. Very good but the portion size was too small.
Fried calamari is great too. I went to this italian place and i noticed this guy eating solo at the next table had ordered some. He ate all the rings but none of the legs, i was triggered. The legs are way better than the rings.
