>Doc said I should stick to fish and poultry for a while
>Buy some cheap flounder fillets
>Never cooked fish before, how hard can it be?
>Try seasoning and searing on medium high
>Shit falls apart
>Turn heat on high for second fillet
>Shit's too crunchy
>Turn heat somewhere in the middle for another

How do I fry a fucking fish.

fish love to swim, so make sure to use enough oil
For white fish like flounder, bread and shallow-fry or deep-fry.

Poached an egg in a ladle this morning.
Probably came out the most perfect poached egg I've ever done since its hard to get really fresh eggs around here.
Just make sure to oil the inside of the ladle first so it doesnt stick.

How do you make really good French toast
Use thick cut "texas toast" style bread.
I read somewhere that after frying it in a pan, you're supposed to bake it in an oven for a little while.

But what kind of spices and stuff do I mix into the egg mixture?
>tuna melt
Am I wrong for finding the concept of putting cheese on fish disgusting? I almost want to try it, because I love tuna sandwiches and want a new way to enjoy them, but I can't get over the idea of cheese and fish....people like this?
>>8494792
Tuna melts are top tier diner food. This or club sandwich.
I'm skeptical as well, cheese doesn't feel like it goes with fish at all.
Tuna melt IS disgusting, but what's wrong with cheese and fish? A good fish pie, or white fish in a nice herby cheese sauce, is a perfectly natural pairing
What is the herbs and spices combo you always go for? The one you add to your dishes almost without thinking?
> salt, pepper and parsley combo doesn't count
For me, it's sage and thyme, which go in pretty much everything. I also add exactly 5 bay leaves to every dish with a higher water content (such a stews or soup).
As a side note, I'm curious to see if anyone here uses lovage and if you do, what does it go in?
anybody?
>Always go for
No one with half a brain will always go for a herb or spice unless they suffered autism.
Rosemary and thyme. I know it's a basic bitch, but it really is so good.
How much would you charge someone to make them your best dish?

It's lasagna so like $150 for the entire thing? Costs like $60 in ingredients and takes about 2 active hours and another to bake it. I don't think I could price it out by slice. My landlord sometimes asks me to make it and share for a discount in rent.

Please tell me this bitch got roasted.
Last one is done.
How you boyos doing today?
I've cut my intake in half for the last couple weeks. Taking Sunday off drinking. I look a little less bloated already, but I'm way more tired despite sleeping more. I want off this ride.
I've reduced my intake from approximately 14-16 servings of alcohol per week to approximately 7 so I am pretty happy about that since it comes out to about a beer per evening (or 1 shot rather)

Went to the market and bought four bottles of wine. That ought to get me through this evening's festivities. See what happens tomorrow. Sleep schedule is way off.
Waiting on delivery of a small cask of kalamata olives... want to put a pasta sauce together...

Why even bother making your own gravy? It will never be as good as this.

I actually use powdered onion soup stock with ketchup and mustard to flavor/color rice to taste and feel like meatballs. There's some interesting uses for mixes like these.
