I didn't have any flour for making chicken parmesian, so I used potato starch instead of flour before dipping into egg, and then bread crumb. It doesn't taste bad necessarily, but there is this awful smell/taste, like chemical and it is ruining the meal. Did I fuck up? is dinner salvageable?

I've been using a basic recipe for egg noodles - Flour, eggs, milk, butter, and salt. The noodles form and cook well, but the flavor is a bit lacking. Does /ck/ have any suggestions for what I can add to the noodles themselves to make them more flavorful? The only suggestions I've heard so far involve adding a shitload of butter once they are boiling.

>flour, eggs, milk, butter, and salt
>basic recipe
to make egg pasta all you need to do is add 1 egg (70 g) for every 100 g of flour, and knead for 10 minutes
if you want more flavor use more yolks and less whites, or add some salt
and don't add butter or milk for christ's sake
>>
>>9346748
This. Though if you really want to add flavor to the pasta itself, sundried tomatoes and spinach are common options

Why in the holy mother of hell is it so hard to find spumoni in stores? I've been to 7 different markets in the last week none of them had it in stock, hell half of them didn't even seem to carry it. Is there some kind of anti-spumoni league out there keeping it from the shelves? Anyone else have an experience of not being able to find a food product you figure would be pretty readily available?

Yep. Caul fat. Not even the butchers could get it for me. I finally gave up and mail-ordered some. I had to buy 20 lbs. I portioned it up, cryovaced it, and stuck it in the freezer.

I also had the same problem with finding very large hog casings for sausage. Butcher had 'em but would only sell them in a massive 5-gal bucket, which is far more than I needed. Had to mail order those as well.

Just buy the individual flavors and get a scoop of each.

Turkey meat that isn't ground, deli meat, or a whole bird is strangely hard to find.

I dunno about milk with adicophilus in it, but if you want acidophilius then just eat yogurt or kefir. You can also get acidophilus supplement tablets. Look in the pharmacy or near the vitamins. They'll probably be labeled "probiotic".

Never tried them. In my past experience the Asian brands that have little if any English on the package kick the shit out of the domestic ones so that's all I buy these days.

I'm in need of some fairly specific reading material that I seem unable to google, the closest thing I can find to what I need would be guides on piping icing on cakes.

But
>recently got first kitchen job and have moved from the salad section to deep frying and desserts
>all deserts have to have whipped cream on them somewhere to decorate the plate
>you are allowed to do whatever you want when arranging the deserts as long as it looks good and absolutely everyone presents each thing differently when working that station

So I need some infographic or reading material on making patterns, shapes etc with whipped cream canisters.
And also potentially reading material on dessert presentation in general.

Can anyone help me out?
