My family is 6th generation hospitality, from cooks to hoteliers, from dish pigs to owners of multiple hotels. After that you should get a sense of what you like/need and move on to stainless steel, enameled cast iron, and carbon steel.

I spend a bit buying greek yogurt, flavored yogurt for my baby & kefir. Seems like I could make it for much less

Why does my cooked chicken smell? I buy chicken breast, bring it home, brine for 15 mins, bake, and freeze in zip lock bags. Once frozen, they smell like sulfur. They don't smell when raw or after reheating. I also haven't gotten sick from eating these every day for months.

The Super Bowl is upon us. I flat out refuse to make ribs, wings, chili, nachos and basically all the same crap that you need a prilosec to get down.
Decent Super Bowl menu? Criteria:

>at least some items can be eaten with fingers
>won't spill when people watching the game suddenly stand up to cheer
>might nod to the american traditions of spicy, saucy, tangy meat but still be elevated.
I was thinking about some kind of BBQ beef sushi roll, little Bahn Mi with Super Bowl type meats instead of ching chong meat. I have about 30 lbs of venison, too - maybe some kind of terrine of venison with crackers?
