what the fuck is up with this picture?
After watching Goodfellas for the hundredth time this past week I got a hankering to make some old fashioned meat sauce. If you grew up in an Italian-American family in New York or Brooklyn then you probably called this "gravy" and made it every Sunday. I've made lots of pasta sauce over the years but this time I wanted it to be authentic in regards to the film and so I looked up Henry Hill's recipe (also found in his book, which I plan to get eventually). Following are some pictures I took of the process.
Share stories of your favorite sauces for pasta, or some of your methods, and maybe we will be able to share some memories too.
Here laid out are most of the ingredients I used. Tried to follow the recipe as closely as possible. Here's the list:
Meatballs (double batch - cut this in half if you don't plan on freezing half of them):
4 lb. mixture of ground pork, veal, and beef -- You can use whatever ratio you like. Here I asked the butcher to divvy them up into fairly equal portions for 1:1:1 ratio of the meats.
1/2 C chopped onion
4-6 cloves chopped garlic -- Depending on your taste use more or less.
1 T each chopped Italian (flat) parsley and basil -- Again, depending on taste, adjust. I like the herbs.
1/2 C breadcrumbs soaked in enough milk to make them into mush (about 1/2 C) -- Seasoned or not, doesn't matter. Or make your own.
1 C grated Parmigiano Reggiano or Pecorino Romano (I grated a 1/2 each and combined them here).
Salt and pepper
4 whole eggs
Method to follow with more pictures.
Meatballs (cont.):
Add the meat to the bowl and combine with your hands
Add the eggs, one a time, incorporating each
Add the herbs, cheese, salt and pepper, onions, garlic, combine
Add in a few spoonfuls of the soaked breadcrumbs (and any milk that didn't get absorbed), combine further
If the mixture is still too dry, add some soaked breadcrumbs
Otherwise, ball the meat into golfball-sized balls, set on a plate
Get your pot out (I used the same pot I'd eventually cook the sauce in), and put the heat on medium high
After the pot's good and hot, add 3-4 T of olive oil and wait til it heats a bit
Fry off the meatballs in batches, turning them from time to time so they brown
If you're cooking the meatballs in the sauce then don't worry about them cooking all the way through -- if you're freezing them for later, then make sure they're done before you take them out of the pan
Here's a shot of them mixed and balled.
Here's a shot of them frying. I crowded the pan initially, so don't make my mistake. Make sure you leave a good amount of room for them to cook and so you can turn them easily. They should take about 8-10 minutes total per batch to cook completely. Obviously if you're unsure, take one out and cut it in half to get an idea for how long you've gotta cook your next batch.
Here you see some cooked meatballs, and the sausage laid out (that'll come later). I'm still not the best when it comes to frying, so every other batch I deglazed the cooked-on bits with a bit of water and drained the pot into the measuring cup you see on the right there. I put it in the fridge and will fish off the cooled fat later. Not sure what I'll do with the juices. Might add them into something that takes well to a strong flavor, like broth for ramen. I wouldn't advise adding it to the sauce because it could cause it to take on a burned flavor, which you don't want.
