Gas is more convenient, charcoal/wood produces a much better flavor because of the smoke. When you are grilling (as opposed to smoking or slow BBQ) charcoal is also superior because it burns hotter than a propane flame.

I can't comment on the cost since I don't live in Germany.

As for the coal ash, I just dump it outside in my yard. You can also throw it away in the trash (once it's cool, of course!)

I have a propane grill because the waifu, "the charcoal ashes are so nasty, let's get gas," and I hate it. I also have a smoker that I do long projects like pulled pork or ribs. I would definitely get charcoal instead of propane if I were you, especially since you want to do longer projects.

I've bought King Arthur Flour's live starter (it arrives in a little container, soft and active, you just begin feeding it flour and water), and I've also bought Sourdough International's dried starters...

KAF's were definitely easier to get started since they were live and fed from the beginning. Sourdough International's advertising shtick is that their starters are all from different regions of the world, and they claim they all have different characteristics. I'd just go with KAF's fresh starter, but they're both about the same price.

With regards to meat, as long as it tastes at least as good, and is molecularly similar (to my knowledge, lab grown beef is produced with real cow DNA), it's all fine with me.

For the milk... I have similar requirements for molecular similarity. I don't want to drink milk that is free of lactose.
