I shiver just thinking about having to wear a uniform. I remember when I was 18 and worked at fish n chips place. Had to wear the collared shirt, baseball cap, apron, black pants. For some reason I couldn't get used to it. It was perpetual hate.
In fact I went through college not to make any real money, because you really don't in environmental science, but because I never wanted to have to wear a name tag and a uniform. Or deal with customers whatsoever.

I bought some of this high priced unrefined sea salt at Whole Foods (pic related) to see what all the hype was about. I tried it on some fresh radishes and green onions and it felt like I was chewing sand. I thought, it must be the mineral particles dissolve in liquid so I simmered some stock with a bit of it added, let it cool and you could see a layer of grit at the bottom.

For whatever reason I find that jalapenos vary in heat more than any other pepper I buy. Sometimes they're nearly heatless, other times they will give a habnaro a run for its money.
Depends on how receptive you are to heat. To me, the perfect balance of heat and flavor is the Serrano.
