Should I get a credit card now at 22 to start building up a credit score?
Would using it to buy groceries and instantly pay it off all work?

Starting as early as possible is good, get a low limit since you'll be paying it off asap and try to not use it for anything else.

What if I spend 200 or 300 on some important shit, and pay it off a week later?
Are interests calculated all day? I think I might a card at my local Scotia at 18% annual interest.

Interest is applied at the end of the month for whatever the remaining balance is that you haven't paid off yet. If you pay off your balance in full every month, you won't be paying any interest.
Ideally you spend 2-300 with actual money you have, like cash or a debit card. You should really only use your credit card to make a couple very small purchases each month and pay them off in full each month. This helps to build a good habit and build good credit. Don't spend money you don't have. Don't use your card if you know for certain you couldn't pay off the bill at the time of spending it.
