How do I make a living mining ether?
My current job is giving me 40k a year but it's tough manual labour. On the side I'm mining with a single RX 480 right now and making about $60 a month.
What kind of setup would I need for at least $500 a month?
Have you not heard? Eth is a mess.
Did they stop teaching basic division in elementary school, Anon? $500/$60 = ~9 GPUs. PCPartPicker says an RX 480 is about $275. To get the required hashrate, you'd need to buy $2,500 worth of graphics cards. You'd also need at least one new PC to house them, since I don't know of anything that has 9 PCIe slots. So let's round up to $3,000. So you'd need about 6 months to break even, assuming you don't have to pay for electricity and assuming the ETH/time ratio stays the same.

I know the math smartass, the question is more about optimal rigs to house the new GPUs.
And also if I should be dual booting.
