Mix pigments together and you're reflecting fewer and fewer wavelengths because you're absorbing more and more. Eventually you're absorbing all of them... so no colour gets reflected... so you get black. Mix the cyan, magenta and yellow together and you're absorbing "all" of the colour wavelengths so you get black. No ink is perfect though so you'll probably get a very dark purple or brown. This is why printers still use separate black ink which is actually black.
