Mathfag here. This type of trick would take too long to fully explain (and I don't do that shit for free anyways) but I will give you the crux of the problem.

The problem is that while 30 is divisible by 3, 25 is not. If it were 24 a night instead you get
10x3 = 30
30-6 = 24
6/3 = 2
10-2 = 8
8x3 = 24
30-24= 6
Everything works, bellhop lies and says room is 27 so he can pocket 3 bucks
9x3 = 27
27+3 = 30

No missing dollar. So again, the problem is that it goes from being divisible by 3 to not being divisible by 3. There's the trick.
