Assuming you have a brain I'd say Skyre with Ultimate Combat+Combat evolved makes the enemies far smarter and only with nicely timed blocks can you defeat enemies.

1. Frostfall: Hypothermia Camping and Survival - Adds a heat and damp system that punishes the player for swimming around in frigid waters and overall makes the game much more immersive. You won't want to run around wearing only boots in the middle of Hjaalmarch anymore. I recommend using the WEAR option, as it makes different armor protect better or worse.

2. T3nd0's Perkus Maximus: Totally redoes the perk system of vanilla, to make each perk useful, and adds non-passive skills to almost all perks. Makes leveling a character actually change *how* you play the game. Beware: this plugin requires you run a Java patcher whenever you change your modlist. It's worth it.

3. Deadly Dragons: comprehensive overhaul of dragons that makes them not fucking blow at higher levels. Also lets you dump excess Souls into perk points. 10/10.

4. SkyUI and SKSE: required for some of these, SKSE is a mod resource that allows new things to be done in Skyrim's scripting engine, SkyUI is a mod that makes the interface feel a lot more at-home on PC as opposed to the console-ified UI that the vanilla game has. Many mods also use the Mod Configuration Menu that SkyUI adds.

Finally, check out Wrye Bash for Skyrim, it's a program that lets you do a whole load of powerful things in making your game more stable when running larger mods and large numbers of mods. If you use Wrye Bash, Nexus Mod Manager is fine to use for installing mods.

Last tip, pay attention to the order in which mods are loading. A mod loaded later will overwrite changes made by a mod loaded earlier, so the order in which they're loaded matters greatly.

Source: Played thousands of hours of modded Oblivion, hundreds of Skyrim, thousands of Fallout 3, and have been modding both for my own benefit for years.
