the best cut is the belly. breast tends to be fatty and gross, thighs are pretty good cuz of the marbling, the fillet tenderloin on people isn't big or good at all. it's best to take out the oysters, aka the cluster of muscles behind the shoulder blades first and eat those after lightly cooked.
