Because their cliffhangers either turn into something completely disappointing (which is predictable) or generally just don't pay off at all.
And when people see tons of cliffhangers in a row they eventually get bored and realize they're shit.
Also, what helps those TV shows is one simple thing. Seasons. They have episodes weekly, then nothing for months, even years, then another season starts. They don't get bored with it because it's not on TV every fucking week.
