There are 3 factors that go into a fight. That's Speed, Strength, and Skill (technique and knowledge of moves)
There are sic forms of Attacks. Punching, Elbowing, Kneeing, Kicking, Felling (throws and shoves), and Grappling.
There are 2 forms of Defense. Blocking and Dodging.
Many styles consist of one or more forms of attacks, but all consist of the same form of defense.
If you want to master each form of Attacks there are many martial arts to choose from
Punching:
[Basics]: Boxing
[Extra]: Wing Chun, Karate (reason why is because they don't teach you Chain punches or a Hammer fist in boxing)
Elbowing & Kneeing
[Basic]: Muay Thai
Kicking:
[Basics]: Taekwondo, Muay Thai, Karate.
[Extra]:Capoeira
Felling:
[Basic]: Judo, Jiu-Jitsu.
[Extra] Aikido
Grappling:
[Basic]: Wrestling, Brazilian Jiu-jitsu
Of course there are many of Martial Arts out there that incorporate the two of more forms of attack like Sambo, Krav Maga, ect.
Now if you want to master forms of Defense there aren't a lot to choose from. Many martial art consist of the same thing.
Blocks
[Punches]: Boxing.
[Kicks]: Muay Thai
Dodging:
[Punches]: Boxing %100 (pretty much just head movement and good foot work).
[Kicks]
[high kicks] Mauy thai, Taekwondo. But no different than punch dodging, just good head movement.
[Mid kick] Muay Thai, Taekwondo. Kicks like these are rarely dodged, but its as simple as stepping out of range. This is where people catch or block kicks.
[low kick]: Muay Thai, Taekwondo. Again Rare just step out of range. Usually people just check kicks here.
