With some risk of injuries in the process for elephant/rhino/grizzly/polar bear etc, but people have even killed a thousand pound+ bear with their bare hands in years past, so doing it with a sword and steel protection would be a piece of cake.

If just extant animals, knight beats everything except for hippo elephant, rhino, and maybe a really big croc in certain circumstances.
If we're including extinct animals, I can think of quite alot of animals the knight wouldnt have a chance agaisnt.

In all seriousness, an armored knight could probably all but the largest herbivores or bears. Not much else could crush the armor or bite through it. As for crocodiles, see pic related.

Would work best against ambush predators, and animals that rely on slashing and agility. Basically he's best equipped to fuck large cats up. The large cat can still kill him if it doesn't fight defensively to escape without getting injured and killed, simply because there's no way in fuck a human has the strength to kill something like a charge lion/tiger with 1 hit.
Large herbivores with crushing force will fuck his shit up 6 ways from Sunday. Elephants, bison, moose, rhinos, hippos, and none small bears are all guaranteed to win.

The only animals that might give him trouble are things like grizzlys, who could potentially cave his chest in through the breastplate.
Back when they actually hunted bears they didn't wear full plate, and I assume this is because a long spear with a sturdy crossguard (and 20 other men with the same, and some horses, and some dogs) is a better defence than some plate.
