They are mostly a sort of jungle camo mixture of greens, some browns, some yellows, whites, greys. This is highly variable between species and varies by genetics too. And of course, being chameleons, they can modify their colour fairly drastically, although it's a myth that they do it for camoflage reasons. It's more of a reflection of their emotional state. Like scared and stressed will make then darker. Ehen sleeping, the colours became pale and light. Active and alert but not stressed is vivid colour and nicest looking.

Also, there is a mating behaviour component to it. Such as in the video above, male chams sometimes run through all the colours they have as a way to signal/impress potential mates.
