Sorry to break it to you OP, but the cats aren't actually scared of specifically cucumbers as funny as the thought would be.
The reason they're scared is that the cucumber has been placed there without the cat noticing it. Since cats are adapted to be as aware of their environment as possible (being stealth predators and all), the effect of being frightened is amplified. But it would essentially work with any foreign object sneaking up on the animal unnoticed.
Also, the videos you see on the internet are a product of selection bias. You obviously don't see the hundreds of videos taken where the cat doesn't fly into the air, because who would even upload a video like that? There's nothing to see.
