So despite my encouragement to get a rescue etc, the gf has her heart set on a purebred dalmatian. She's always wanted one etc.
It's her money so it looks like it's happening.
Anyway I have seen a lot of purebred dogs with shitty health so I really want to help ensure that we get one that is healthy.
What the fuck do you look for in a breeder? If we're going down this path I want to do it right.

Research Dalmatian specific sites as they have problems unique to the breed, namely kidney stones.
Your country probably has a Kennel Club or Dalmation Society/Club- there you'll find a list of approved breeders. You might be placed on a waiting list, if you contact them ask them if they do all of the recommended health tests for their litters.

Does she know how active those dogs are? They are nuts and are often brought to rescues because of it. Let her know that it may be expensive buying from a reputable breeder, but if she cheaps out on that part she'll pay for it later.

Deer leave their fawns in a safe place while they go do deer things. Every year I find a couple tucked away on my porch or flowerbed, the mom comes back later for it.

I'm thinking about getting him some shoes. The pavement can get really hot, and he gets weeds and thorns stuck in paws every so often.
The only thing that sucks is that the pavement usually keep his nails worn down. How would I know when it's time to trim them?

Leaving an older dog or lazier breed alone while at work is doable. Not optimal, but doable. Give him a walk before leaving, a Kong or toy while gone, and lots of love while you are home.
The bigger issue is walkies. Can you manage two, at least 30 minute walks literally every single day? More and longer the better. This week try to walk 30 minutes each day twice a day before and after work. If you are finding this a pain, then yes, you shouldn't get a dog.

I've heard they key in on your breath, so CO2, but I don't know if that's actually true or a rumor. Also heard if you eat bananas there's a chemical in there that they can detect and seek out, either through your breath or maybe skin, I don't know.
