Well the thing was I'm not positive she was a "stray" perse. She was very clean and had no worms or wasn't super skinny or none of that average stray cat stuff. She just wouldn't leave our house alone and never went home so we took her in.

Training. You build trust and a bond with the animal, then thru repetition and patience the horse will learn basic commands.
Each horse and trainers is different, but typically right and left are controlled by the reigns. If direction is taught by both pulling the right or left reign and a vocal command then with experience a rider could possibly direct the horse with just the vocal whenever they need to.
A horse can get accustomed to gunfire as well, there is just not much of a need for it in today's world. That would be more of a specific training, as well as steering the horse without the reigns.

If I buy a 75 gal tank and add everything from my old 10 gal tank (4 live plants, 2 rocks, 5lb(?) Of substrate, a bit grasshair plants) that I have had for 8 months, + new stuff to fill it up, would it be cycled already, or just how much would it boost up the cycling process?

Did you use the filter media from the 10 gallon? If so you're good. It'll speed it up. I went from a 30 to 75 and added everything and filter media to new filter and cycled within a week.

Join a volunteer program. Half the employees at any animal-related place are volunteers. The other half have loads of experience (from volunteering) and probably 3 or 4 degrees. Competition is fierce for those kinds of jobs and employees can be very picky and pay you shit and get away with it.
Also, if you love animals, never work with them. Ever. It will crush your soul when you learn, for example, what goes on behind those swinging doors at the Petco grooming salon - where they take the animals that aren't super-excited about nail trims.
Animals are treated like animals when no one is looking. You're better not seeing that.
