This. It's never legal to record an interaction without ANY of the parties knowing. But in "one-party states", you can record as long as at least one party to the interaction knows and consents, and that party can be you (if you are in fact a party). In "two-party states", all parties to the interaction must know and consent.
Both implementations have advantages and disadvantages, but what OP wants to do would only be legal in one-party states.

Whether or not it's legal to record someone depends also on whether or not they have a reasonable expectation of privacy, and having sex in a private home is such a situation that recording it without their knowledge is a major violation of their privacy. Recording a phone conversation is different.

However, having sex behind closed doors in a private home, or sitting on the toilet or being in a dressing room are situations where there's such an expectation of privacy and the individual's privacy and intimacy are breached so dramatically, it's different. I'd assume no, unless you find a lawyer confirming that yes in this state it's perfectly legal to record people having sex without their consent or knowledge
