My girlfriend is breaking my heart because she has such a bad self-esteem, mostly when it comes to her looks.

Anyway, she's feeling pretty good about herself and no matter what I say I can't help her while she is an amazing woman, not even talking about our relation, she's one of the top in college, she has a lot of talent, polyglot, etc.
How do I solve that esteem problem ?

It really, really doesn't work this way. You will drive yourself and her crazy trying.
Why don't you look at why she's saying these things? You think it's "self esteem issues." Well, do you think she would say this to someone who she wanted to impress or had a crush on? Or even to a stranger in the street?
She's saying she feels like shit around you. You're not right for her. Leave now before you start having babies or something and saddle her with guilt because she didn't have the balls or self-awareness to break up with you when she could have.

I have already made it clear to her that I am just playing around, I don't think of marriage and I don't believe in long relationships, I've told her about my ambitions in college and how I could probably leave her just to be alone and studying. She's okay with it, we're both focused on studies rather than being a cute new couple. We're enjoying our love life while not being delusional about it, although now it's become quite serious I'm getting in love with the girl (believe me, I weren't at first)
Do you really believe fixing someone is impossible ? I've already made her stop whining, make her talk to me when she's feeling bad, etc. I don't expect to change everything about her life, but if, as you are guessing, she likes me and thinks highly of me, well she will see that she needs to change to stay with me, and I'll be sure to cheer up her esteem and her morale.
