How do I get in the mood for a show that is completely different from the last one I watched?
That should be the second show's job. If it can't then, it's a garbage show.

how do I find a show with the exact same mood as the last one I watched?

That's why I changed my backlog habits. I used to watch shows one by one and even binge a full 12-episode anime in one or two settings. But it made me less inclined to start a new season with all-new characters and plot or genre. So now, I watch multiple shows at the same time, 1-3 episodes according to my mood. It's also a better experience because the pacing of most anime is designed for weekly TV viewing, or for 2-3 episode viewing when the BD volumes are out.
