Sayuri is the one with the most tragic back story, but instead of wallowing in it, she is the most generous of the characters. She just wants Mai and Yuiichi to be happy.

Sure, she has her issues and could use some therapy (they all could), but honestly she is the most well adjusted character in the whole show.

Also, unlike almost everyone else, her tragic past doesn't have any supernatural overtones - it's the sort of thing that could happen to anyone.

She doesn't have any magical powers... she's just a girl who lost her younger brother, but is loyal to her friends and wants other people to be happy.

She's very relate-able, more so than the other characters. She has a vulnerability that the other characters don't, but also a strength that none of the others show.

Go back and watch the scene where she tells her backstory to Yuiichi, and pay very close attention to her wrists and how quickly she covers them. Yes, she's had her tragedy, but she's doing her best to move past it. She doesn't need Yuiichi to come in and save her - she just needs a sympathetic ear.
