The series definitely has made different versions of characters either as a joke or due of other reasons ever since Saber Alter, but some of them do have origins to their myth and has something their other versions don't have. For example, Saber Lily is version of Artoria who just drew out Caliburn, thus she uses it instead of Excalibur. Carmilla is more closer to the legends about Elizabeth Bathory than the version of her we got from CCC, and uses the iron maiden she supposedly had.
If there is something about older David what he would have what the younger version wouldn't have, then it could work. Otherwise it would feel bit redundant.

well we can assume "young david" is the one who is still friends with the sons of the current king and focuses on the version of him who is still a musician(inferred by his second ability) and had killed the Goliath(hes an archer).
