While it tends to be labeled as such, I don't really consider One Piece to be a pure fighting shounen manga like DBZ, YYH, etc. Rather, it's about a journey, and the fights just happen to be a major part of it. Take, for example, the semi-frequent flashback arcs that don't include some grand super powered martial arts fight that lasts for a dozen chapters, or the large amount of stuff that happens in between Luffy kicking somebody's ass. The manga probably spends just as much if not more time in adventure mode than battle manga mode.

Against AI. In a game. Literally everyone, even Ash can do that. How many real leagues, against real people have you won? Gotten to the top of ladder on Showdown? Placed 2nd VGC?

Ash is shit, but for completely different reasons. As far as being strong goes, he's stronger than you ever were, and stronger than you ever will be. The problem is that he doesn't deserve his power. He didn't earn it. He just fucks around for 100-ish episodes and suddenly becomes one of the best in region. He doesn't even train properly. He just wins because of his massive fucking plot armor, as the entire world resolves around him. He's a shit, but not a weak shit. He should be weak, but he isn't.
