It's more interesting to see the characters struggle over their newfound feelings towards guys. And a genderbent character noticing that she likes boys is a good way for them to realize that their mind have affected by the transformation in addition to their body. A character who just keeps liking girls would have little to no inner conflict as a result of their transformation since they probably wouldn't notice a difference.

Also these characters don't go gay, they go straight.

Series where the character switches forms or eventually turns back into a man are also part of this genre.

Kashimashi is a series with a yuri ending, though the character was incredibly girly before the transformation and adapted instantly, so it was pretty bad as a genderbending story. Conveni-N is another example.

But there are also series where the character only shows interest in girls but they have been dropped so I don't know how they end, such as Tsukiyo no Fromage.

Shitei Bouryoku Shoujo Shiomi-chan doesn't seem to be making the protagonist fall for men either, although she does act girly at times.

The Sgt.Frog/Keroro Gunsou manga might be going for an arc that involves genderbending in a Kemono Friends collaboration (This was just an extra page, not the beginning of an actual chapter though).

Take for instance genderswapped characters that are just complete sluts and want to be girls to begin with. These genderswaps are boring as hell since there is no real struggle in the story. Why the hell would you want to read about a guy that wanted to be a girl and then actually transformed into one? The more feminine the genderswap is, the less interesting they become.

Of course these things can be adjusted to such as in say remix heart where the protagonist while not all that manly actually hav thei story start out with tricking the readers into believing that it was a normal girl to begin with... or as is the case with Boku Girl where while the character itself lacked pretty much any and all genderswap appeal, the sheer almost semi-porn nature of the comic made it somewhat interesting.

The OP picture however shows us a genderswap show that suffers from another problem. There are NO male characters in it aside from the genderswap himself. I mean there are some, and one of them even has a name... but that guy isn't even a background character at the level of Hiroshi and Daisuke (Ranma). So what was the point of the whole manga and anime? The genderswap aspect wasn't used, instead we had some yuri stuff... but then, why not make the protagonist a real girl to begin with? The whole genderswap aspect wasn't needed at all for the story.

So if you are going to have a genderswap aspect in the story, you actually need some other male characters of importance that the genderswap can interact with. I'm not saying they have to decide to stay as a girl and start liking men... but you still need that reaction to men to be there!

Because eventually the romance settles on the Male MC and the glasses girl. The genderswapping was there to bring in some plot elements (main antagonist is a lesbian and didn't care much for MC while he was male) and for hijinks. (MC not being used to being a woman and having to buy clothes, ending up in embarrassing situations, etc.)

Even if MC ends up remaining male, those things still happened, it's about the journey not the destination. And believe it or not, people employ different scenarios (genderswapping,reincarnation, entering a game world,etc.) for different reasons and with different goals in mind. Not everyone thinks and enjoys the same things as you, not everyone cares about the male interactions with a genderswapped MC. As an example, take the way Log Horizon approached the trapped in a MMO setting, and the way SAO did. They explored completely different themes, and showcased different elements, same with Kampfer and _your favorite genderbent story_.
