Because gore is awesome. Also, part of the appeals of OVAs was that nothing was off limit. Creators did'nt have to worry about the restrictive sensibilities of the average viewer and could just do what ever they wanted, what they wanted to do was revel in the beauty of flesh being torn apart.

It's mostly OVAs that were like that. Same reason HBO originals and the like are gored up and sexed up, because they could get away with it and it sells.

It was no more gorey overall than anime today is. It's just that the only anime worth going back to rewatch, all aired on late-night time slots, because anime was considered an even more niche interest than it is now. All the old anime that aired during the day was literally designed for gradeschoolers.
So because you're only going back and watching late-night old anime, it seems as though all old anime is gory.

anime even today has no lack of gore
but since they are OVA the gore is animated better (whereas pulp anime is too "low brow" for the serious animators of today).

US movies had a lot of gorn, what with splatterhouse movies and the likes, and anime followed that trend.
