Usually, taking tiles from others' discards is a shit idea unless you have a wind/dragon triplet (which doesn't apply here, since south is not your position, nor the round) or go for all pon/all chii hands. If you're not going for any of these, stay fully concealed. Self-drawn 4-tiles (kan) don't count

You need one Yaku to win (pic related). As the other anon said, staying concealed (not pon/chii) allows you to get yakus like concealed tsumo (just draw your winning tile) or riichi (lock your tenpai, you can't do that after a pon/chii).
But if your hand might fit into one of these yaku patterns, you can (and should) pon/chii to do that.

The singleplayer mahjong does have tanyao and I think it's a good practice tool, since it teaches you to build for double waits rather than single waits, sitting on 1-2 or 8-9 pairs

Unlike in poker where any hand is always 'valid', in mahjong you need to have at least one 'yaku' in order to win. There are lots of them, some simple and easy and others hard and rare. Riichi is one yaku for example but you can't call riichi if you've opened your hand by calling on other people's tiles, as you have.

That's the great thing about Akagi. When I first watched it, I knew nothing about the game but enjoyed it for the tension and the atmosphere. Rewatching it is more and more enjoyable though as I learn more and more about mahjong. I'm on about my sixth rewatch now and loving it.

Why is the scoring system of riichi mahjong such a mess? Count fu, round, multiply by a power of two, round again, unless it's a limit hand. And the last two digits are always zeros, what are thay even for.

Gathering a set of Winds only gives you a yaku if they're the dominant wind of the round or your wind seat. Double if it's both the dominant and your wind seat. Other than that, Winds are worse than normal tiles to complete your hand (you can't make sequences with them which makes it harder) unless you use them to complete another yakus like Hon Itsu or Chanta.
