The MC wants to further tease her voracious gambling appetite, that's all. Her motives are literally that she simply gambles and only enjoys it when there is an unknown risk where she AND her opponent can potentially suffer greatly if they lose. The issue is that almost nobody can bring themselves to risk something so great. The only two characters who have risked something of extreme importance to themselves against her are two members of the student counil (No, they haven't been in the anime yet), and when they lost, it was very clear that Yumeko was further engrossed and wanted to taste more.

The plot is significantly better the later things go because it's revealed that the student council leader sees the school as her own little gambling fish tank ecosystem, and that Yumeko is essentially a voracious predator that threatens all of the supposed apex predators in this fish tank, and that she wants to see precisely what this feasting ground can produce when that unmatchable predator is sufficiently fed. We're even in an arc where nearby aristocrats sent in their entire youths to start a gambling war with students on campus, and of course Yumeko is beside herself with excitement at the prospect of dealing with these lunatics and their own specific ways of gambling.

However it's all just an artistic image here. Yumeko is supposed to be a greedy beast trying to feast on the sun and everything it brings. The president is someone trying to feed this beast as well as she can while making sure not to ever let it get absolutely out of control.

People who defend the anime who haven't read the manga have no platform to stand on beyond simply liking Yumeko's antics.
Do not defend where we are in the anime,
because the Manga doesn't become good until markedly later. I'm almost 100% certain all of the rare moments of actual good writing in the Manga will not be animated at all.
