That's just cause its easier for people to remember the bad/worst things they've done as opposed to every other thing they do. Even tsunderes typically have this, where most people have the idea that they're "violent and abusive" just cause the famous ones are, as opposed to the general meaning of tsundere as just a girl who's just looking tough but is actually sweet.

Hell even the most famous yandere, Yuno, went after the competition first before she tried to kill Yuki, and that only happens in like the last few episodes.

I love yanderes, always my favourite in otome routes too. Just the idea of someone loving you so much to the point of creepiness and being obsessed with you is pretty hot, things like wanting to keep you in a cage (to keep you to themselves but also to keep you safe) Even the extremes of "if I were to cut off your legs, you couldn't run from me so I could protect you, right?" obviously in real life this kinda behaviour would be awful and annoying, but its a nice fantasy.

There's more but I can only recall the ones that are prominent/main character to the story. There's dozens of other stories like harem where the yandere is just for comedic relief so you cant take that seriously.
